    Once I learned how to make homemade pasta, there was no going back! This dough is so easy to make and tastes so much better than store bought! The ingredient list is short and all it requires is a little elbow grease and love.


    Ingredients:

    2 cups flour

    3 eggs

    1-2 TBSP oil

    1/8 tsp salt

    Here is the Lasagna! This is a great recipe to sneak in veggies for your whole family!


    For the sauce:

    2 TBSP butter

    1 garlic clove, minced

    1/8 onion, minced

    1/4 c red cooking wine

    3-4 oz sliced mushrooms

    1 c of other vegetables (broccoli, chopped zucchini, carrots, green peppers, ect), optional

    seasonings


    For the cheese spread:

    1 (8oz) pkg cream cheese

    1 cup chopped kale, raw

    1 cup broccoli, raw


    Layer pasta, sauce, veggies, cheese spread and top with shredded cheese.


    Bake in oven @ 400 F for 45 minutes.

    We are blessed to live in an area where food is plentiful! We are surrounded by strawberries, blueberries, peanuts, and so many other small farm operations. I am thankful for this proximity to "the country" so I can raise my kids to know where their food comes from.


    Last year Raylen sat in the fields and ate berry after berry to his hearts' content. This year, he got to help pick! that was so much fun! By next year, we will have all three of them running around picking [mostly eating] berries!


    This great little farm is only 20 minutes from our house and is the perfect drive for a fun trip every couple of weeks. I hope we get to take advantage of it this summer!


    Stay tuned for recipes we plan to use our strawberries for. These include strawberry pie, chocolate covered strawberries, and strawberry ice cream!!


    Some other recipes we like are strawberry lemonade, strawberry shortcake, and freezer jam. I am hoping to stock my freezer with jam so that I don't have to buy any from the store this year! We shall see.

    This week I should be coming in at a total of about $60 spent on around $95 worth of wholesome and some stock up groceries!!

    Grillin' Saturday: Homemade Bun-less Burgers with slaw and Baked Potato Bar

    Soup Sunday: Tomato Soup and Grilled Cheese


    Here is what we are having this week for lunch.

    I am trying to be better about planning lunches and this is my first week actually writing it out. let's see if we can stick to it.
